I love cooking. So of course that would mean that I would love Thanksgiving too. And that would certainly explain why I’ve spent the past 3 weeks concocting the highly anticipated Thanksgiving menu for this year. While Anna and Randy are off sunning themselves in Maui, (hate you), mom and dad will be joining me, Jeff and Willie in NYC for Thanksgiving again! And this year, I’m taking over all of the cooking! I’m stoked. And given that I have a game on Thanksgiving day, we’ll be celebrating our Thanksgiving on Friday, which is just as good. So, the menu is planned and the shopping list is mapped out. Watch out Whole Foods, Hurricane Karen is coming for you on Saturday!!

Mmmmm. My mouth is watering thinking about the mac and cheese :)

Ahh, if only my Thanksgiving table could really look like this. Sadly, however, that dream will not be coming true this year, but I am one step closer to it! Yes, this year, dear readers, I am hosting my first Thanksgiving in my closet sized apartment. Mom, dad, Anna, Randy and little Jack Jack will be coming to town to celebrate Turkey Day with me and Jeff! We couldn’t be any more excited, (speaking of which, Anna have y’all booked your flight yet?) Alas, the sleeping arrangements are going to be a little less than desirable, ie: Mom and Dad in the bedroom and Me, Jeff, Anna and Randy on air mattresses in the nook that we like to call our “living room.” And don’t forget Jacky Bear, he’ll be snuggled in there with us too!

I know what you’re thinking, are you nuts? Yes, it will be a little tight in there, but I just didn’t have the heart to tell the parents or Anna and Randy to spend $1500 staying in a hotel for Thanksgiving, boo. Sooo, Seven’s Company here we come! But, back to the topic at hand: Thanksgiving dinner! I am taking it upon myself this year to do all of the grocery shopping and a lot of the cooking, big dreams right? Actually, I’m really up for the challenge and looking forward to it. I’m going to be introducing some of the recipes I’m planning over the next few days. First up, we have homemade Mac and Cheese! Mmmmmm, behold!

LOBSTER MAC AND CHEESE

Of course mine will have some minor adjustments. Most importantly, there’s no way I can afford lobster. So, we’ll just scratch that off the list of ingredients, haha. But I’ve actually made this dish before and it turned out DELICIOUS!! It was a huge hit with the hubby, so it will definitely be making an appearance on our Thanksgiving table.

I don’t make a lot of things, especially things that people love to eat. But this salad has never failed me. It’s super easy and delish! Try it!

INGREDIENTS

  • 1 large ripe beefsteak tomato, cut into 6 slices
  • 1 ripe avocado, cut into 6 slices
  • 1 large ball of fresh mozzarella cheese, sliced
  • extra virgin olive oil, for drizzling
  • balsamic vinegar
  • coarse sea salt
  • freshly ground pepper

DIRECTIONS

Arrange tomato slices on a serving platter. Lay 1 avocado slice on top of each tomato, and top with fresh mozzarella. Drizzle olive oil, then balsamic vinegar over the tops, and season with salt and pepper.

Hey Y'all!

Hey Y'all!

While country cookin’ isn’t necessarily a staple in my new and healthy kitchen, I couldn’t resist a little Paula Deen. She’s one of my faves! And she says y’all, which makes me happy since I don’t hear that EVER in NYC. I just wanted to drop by and update you on the poor girl’s gourmet menu I’m whipping up for this week! I’m super stoked for the recipes I’ve found. All of the ingredients can be used and reused throughout the menu. And I always get a kick out of the confused look on my husband’s face when I tell him what we’re having for dinner. Here’s how the dialogue usually goes down between us when he sneaks into the kitchen to see what I’m cooking for dinner:

Hubby: “Mmm, something smells good. What are we having for dinner?”
Me: “Thanks! We’re having a Citrus Chicken and Orzo Salad.”
Hubby: Blank stare. Cricket, cricket. “I thought we could maybe do cheeseburgers tonight?”
Me: “Haha, you thought wrong darling.” (Evil smile on face)

But the funniest part is, even though I basically have to hold his hand and reassure him that what I’m cooking for dinner won’t kill him, he usually loves it and goes back for seconds. Or he could just be a really good actor and doesn’t want to hurt my feelings? Anywho, the shopping trip was a great success today, especially with the hubster’s help! We got all of the necessary ingredients, (and of course some splurge items for the hubby) and came out right around $100, which fits quite nicely into our budget. (Before we moved to NYC we made a budget to stick to during the first year and titled it the “How to Live in NYC and Not Starve Budget.” Catchy don’t you think?)

While groceries in the city are so much more expensive than groceries back home in NC, I still managed to find some great deals today! And a lot of the things we needed to buy for this week’s menu are certain staples that everyone should keep in their kitchen on a day to day basis, (balsamic vinegar, olive oil, various spices, onions, peppers etc.) So without further ado, here is this weeks menu! I hope you find the menu inspiring and I’ll let you know which recipes turn out the best! Also, don’t you just love the cute recipe logos (below) my sister designed for me?

Absolutely nothing, that’s what. My fridge (seen above) seems jam packed with all sorts of goodies, but the sad part is that there’s not enough ingredients to put together anything that would resemble a complete, healthy and balanced meal. Fooey. Guess we’ve gotta go grocery shopping honey! Ohhh, grocery shopping in the city. Gone are the days when you can just hop in your car and drive to the nearest Harris Teeter when you need your food fix. Instead, now we must strap on our most comfortable shoes that can endure the mile walk both ways, then check, double check, and triple check our grocery list to make sure we have everything, (because there’s no way in hell I’m making a repeat trip), and grab your closest friend, husband or complete sidewalk stranger to accompany you on the trip, because you know 2 arms will not be enough to carry the load of food you’re about to purchase.

But when you’re freezer looks like this, you know it’s inevitable that you just go ahead and get it over with already. (The sooner you go grocery shopping, the sooner you get to enjoy the new quart of Edy’s Slow Churned Cookies and Cream ice cream that you buy! Yippee skippee!)

But alas, I am starting anew. I made a promise to myself that when I moved to the city I would revamp my lifestyle in order to lead a healthier and happier life! I would start working out more, (joined the gym 2 weeks ago- check!), walk more instead of use public transportation, (it saves money anyway- check!), and begin to fill my diet with more wholesome and nutritious food. That means more veggies, fruits and whole grains, and less sugars, carbs and bad fats, (and less red velvet cupcakes with cream cheese frosting, single tear). Naturally I conned my “meat and potatoes” husband into joining me on this fun adventure and thankfully he hasn’t starved yet!

I really believe that living a healthy lifestyle not only puts you in better shape physically, (duh), but mentally as well. Sure one of those soft pretzels from the NYC street vendor looks delicious and tempting, but good lord does your stomach swell up to the size of a beach ball after all those carbs and salt! Your body and mind just simply feel better when you nourish them properly. I’m no genius when it comes to proper nutrition, but when I come to a fork in the road, I know to take the path that leads to the healthy spinach salad and not the yummy Edy’s Slow Churned Cookies and Cream ice cream, (sigh, it was nice knowing you ice cream, I bid thee a fond farewell….after I go finish off the tub that’s sitting in the freezer right now).

So, what I’d like to do is create a weekly post of my cooking experiences. I love to cook, and I’ve learned that being on a tight budget can sometimes make it difficult to eat those healthy fresh ingredients. But, if you plan your grocery list carefully and assign meal themes to each week, (ie: chicken week, or pork week etc.), you’ll be able to maximize the ingredients on your grocery list and use them up throughout the week. That way nothing goes to waste and your meals are still budget friendly! What I may end up doing is posting my grocery list for the week, the total amount of money spent on groceries, and what healthy recipes I’m planning to make! I’m hoping that my menus can be an inspiration for all of you out there who stand in your kitchen at dinner time with a confused look on your face. Of course I would love input from you too! Post any recipes that you’ve found that you like and that fit into that healthy, budget friendly category. I’m always up for new ideas!

Side Note: Ultimately, I do have a serious goal for which I’m making all of these lifestyle changes. But, I’m keeping that goal a secret for now. I will say that it has something to do with dance, and an audition in April of next year. That’s all you get though!

A: I know i know! But I won’t tell. Anyway, I’m leaving the cooking ball in your court. That is def not my forte. The extent of my cooking is pasta, chicken w/ A1, and sandwiches. I make a one mean appetizer that involves tomatoes though that i can post sometime and I think i just mastered my guacamole. Mmmmm. I heart avocados.

So, hi, my name is Karen and I’m a MARTHA-holic. GASP! I know, I know! It’s a problem, but there’s just something about that Martha Stewart blue color that really floats my boat. When I registered for my wedding, I got made fun of a lot because the majority of my registry at Macy’s was overtaken by Martha Stewart products and everything was primarily for my kitchen. I couldn’t help it! It was like the products were just calling my name and telling me to shoot them with the registry gun, (pow pow!). Martha Stewart kitchen towels, hand mixer, blender, ice cream scoop, oven mitts, digital kitchen timer, paper towel holder, salt and pepper shakers….all absolutely needed things? Well, no. Do I have them? Yes. Witness exhibits A and B:

Sigh. Isn’t she beautiful? I absolutely adore cooking, so having a pretty kitchen just makes cooking that much more fun! Sadly, however, it doesn’t stop there. As you know, I’m a recent newlywed. I spent 16 months following in my sister’s footsteps by using Martha Stewart as my ultimate wedding planning guide…and boy did she deliver! She’s fabulous! Martha Stewart wedding magazines were some of my most prized possessions and I frequented MarthaStewart.com/Weddings like it was my job. The weddings she featured were always gorgeous and she had the most crafty ideas. In my opinion, everything about the Martha Stewart line is quintessentially classic and super beautiful.

Needless to say, it doesn’t take too much to make this girl happy :)

A: I do loooove me some Martha Stewart Weddings. That was one of the hardest things to give up after the wedding. I really don’t have an excuse to buy those magazines anymore and I miss them. There were so many pretty ideas in there.

As for your kitchen supplies, yes I can vouch. I’ve never seen so may aqua blue colored things in my life. I hope you don’t get tired of it any time soon! And since we’re sharing kitchens I’ll share mine too. I don’t believe I have one thing Martha blue in it. The horror! I know i know. I have navy blue though.
