Confetti Cake!

Does anyone else remember confetti cupcakes from birthday parties when you were little? How great were they? Especially when you mixed them with the confetti vanilla frosting. Oh good lord. So yea, I had a pretty crappy day yesterday, and when I got home the hubsters and I baked confetti cupcakes, and it completely turned my day around :)

Nothing like a little sugar, food dye, and unidentified candy specks embedded into cake to completely make your day.

A: I’ve never seen a couple eat so many cupcakes as you and Jeffers! I dub you “The Cupcake Couple.” As for confetti cupcakes, you’re that kid that ate the rainbow colored vanilla ice cream that would turn your mouth blue.

I have a friend of a friend (of a friend of a friend of a friend….kidding) that makes these desserts that are based on end of the world scenarios. Only appropriate for a Sunday morning no? Anyway, I actually think it’s a brilliant idea. I love anything with a concept and well I love anything that’s a dessert, so put it together and it’s a delicious masterpiece! Here it is, the last cookie in the box. It’s an oatmeal raisin cookie AKA the last resort cookie. We always get the variety pack cookie box from Costco with white chocolate macadamia nut, chocolate chip and oatmeal raisin cookies. The white choc macadamia nut (my favorite) is always the first to go, then the chocolate chip, then the cookie that barely has the right to call itself a cookie, the oatmeal raisin “cookie.” Randy loves these things and purposely buys them because he knows it’s the only dessert that I won’t eat. Only in a time of desperation, a sugar frenzy if you will, will I eat one of these. I guess I’m in one now, because I’m considering it.

K: FAIL.

I baked strawberry muffins this morning. I’m a regular Betty Draper Crocker. Really I just had to use up the 3 pounds of strawberries I bought at Costco last weekend and this seemed like a good idea. Unfortunately I didn’t have a cute apron to wear while I was baking. If I had it my way someone else would bake for me I’d be wearing one of these super cute aprons and using this vintage-looking Anthropologie cookware.

Yep you read that right. These artery clogging gut bombs are finalists in a contest held over Labor Day weekend each year to pick foods that will be featured at the State Fair of Texas, Sept. 25. The Dallas fair claims to be the birthplace of the corn dog (I owe them a big thank you then!) and is also known as the “Fried Food Capital of Texas.” Shocking I know.

The creator, Abel Gonzales, makes these by wrapping a dollop of frozen, whipped butter inside sweetened dough then quickly frying it. The result supposedly tastes like the most buttery bread you’ve ever had. It actually sounds delicious and worth the 6 months a ball I’d be taking off my life.

Yoohoo, anyone there?

Yoohoo, anyone there?

Hi people! So, I’m sorry that I totally haven’t been pulling my weight on the blogging for the past few days. I get home from my internship around 8:30pm, so I’m a tired girl and I have to find dinner and blah blah, so there’s my lame excuse. My internship is on Tuesdays, Wednesdays, and Thursdays, and sometimes Saturdays so that means every other day you get lots of blogging from me….promise :) But I’m having way too much fun at my internship, so on the days I’m there, I may be a little MIA, forgive me. 

Anywho, so due to my late(ish) nights of work, I’m sad to say that “Karen’s Kitchen” has hit a bit of a road block. Poor Jeff is starving before I get home, so instead of dinners filled with healthy foods and yummy ingredients, we have been surviving on turkey sandwiches and hot dogs. GASP! I know, I know! I’m such a failure. But the way that I look at it, we’ll eat healthy the other 4 days of the week, right? And 4 days is more than 3 days, so that means I eat healthy for the majority of the week, so that means I win.

Booyah.

I don’t make a lot of things, especially things that people love to eat. But this salad has never failed me. It’s super easy and delish! Try it!

INGREDIENTS

  • 1 large ripe beefsteak tomato, cut into 6 slices
  • 1 ripe avocado, cut into 6 slices
  • 1 large ball of fresh mozzarella cheese, sliced
  • extra virgin olive oil, for drizzling
  • balsamic vinegar
  • coarse sea salt
  • freshly ground pepper

DIRECTIONS

Arrange tomato slices on a serving platter. Lay 1 avocado slice on top of each tomato, and top with fresh mozzarella. Drizzle olive oil, then balsamic vinegar over the tops, and season with salt and pepper.

K: S’MAC

Mmmm, cheese.

Mmmm, cheese.

So, I was watching the Food Network the other day, big surprise I know, and they did a special on a cool new restaurant called S’MAC located in the East Village. It’s a restaurant that specializes in the best comfort food in the world…macaroni and cheese. Jeff and I both live and die by really good mac and cheese so of course we had to go check this place out. We had two friends visiting us in the city, (shout out to Ross and Kimberly!), and we were trying to decide what to do for dinner and this place happened to pop up in my mind. So, off we went.

The restaurant is super cute and modern looking. It’s a really small area, but they have such a fast turnaround on food that you really don’t notice the lack of space. The prices are fantastic, (we’re talking somewhere in the ballpark of $4.25 for a pretty good sized skillet of your personal mac and cheese, score), and the choices of what kind of mac and cheese you want are endless. It’s such a great concept and it’s so popular in the city. If you’re ever up here, definitely check it out!

Funny sidenote: Afterwards, I felt horrible about taking my friends there for dinner because I totally forgot that Ross hates cheese. I’m such a moron, but he made it work and actually had a pretty appetizing looking cheese-less mac and cheese. Sorry Ross!

A: mmmmmmac and cheese. I haven’t had some of that in forever. Not sure if we have any restaurants that feature Mac and Cheese. I’m going to need to do more research on this!

Hey Y'all!

Hey Y'all!

While country cookin’ isn’t necessarily a staple in my new and healthy kitchen, I couldn’t resist a little Paula Deen. She’s one of my faves! And she says y’all, which makes me happy since I don’t hear that EVER in NYC. I just wanted to drop by and update you on the poor girl’s gourmet menu I’m whipping up for this week! I’m super stoked for the recipes I’ve found. All of the ingredients can be used and reused throughout the menu. And I always get a kick out of the confused look on my husband’s face when I tell him what we’re having for dinner. Here’s how the dialogue usually goes down between us when he sneaks into the kitchen to see what I’m cooking for dinner:

Hubby: “Mmm, something smells good. What are we having for dinner?”
Me: “Thanks! We’re having a Citrus Chicken and Orzo Salad.”
Hubby: Blank stare. Cricket, cricket. “I thought we could maybe do cheeseburgers tonight?”
Me: “Haha, you thought wrong darling.” (Evil smile on face)

But the funniest part is, even though I basically have to hold his hand and reassure him that what I’m cooking for dinner won’t kill him, he usually loves it and goes back for seconds. Or he could just be a really good actor and doesn’t want to hurt my feelings? Anywho, the shopping trip was a great success today, especially with the hubster’s help! We got all of the necessary ingredients, (and of course some splurge items for the hubby) and came out right around $100, which fits quite nicely into our budget. (Before we moved to NYC we made a budget to stick to during the first year and titled it the “How to Live in NYC and Not Starve Budget.” Catchy don’t you think?)

While groceries in the city are so much more expensive than groceries back home in NC, I still managed to find some great deals today! And a lot of the things we needed to buy for this week’s menu are certain staples that everyone should keep in their kitchen on a day to day basis, (balsamic vinegar, olive oil, various spices, onions, peppers etc.) So without further ado, here is this weeks menu! I hope you find the menu inspiring and I’ll let you know which recipes turn out the best! Also, don’t you just love the cute recipe logos (below) my sister designed for me?
